One of the most comforting dishes of my youth made even more special by the accompaniment of my famous “white widow” salsa. The thin noodles are sautéed til al dente and have a warm heat from the dry chile paste marinade, garnished with quest cotija, crema, cilantro, lime and served inside a tortilla that has been crisped up.
