The cookie known as the puerquito (piloncillo pig) is so common in bakeries no matter where you are in the country, perfect coffee cookie. Panque de elote (sweet corn poundcake) similar to the sweet tamal if it had been crossed with the tastiest yellow butter cake. Finally capirotada (bread pudding) probably the most varied recipe in this class region to region, sweet and savory perfection.  This is a part two from the first pan dulce class.
