Sweet tamales are eaten from the North to the South of Mexico with recipes varying by ingredient availability. I was able to strike a happy medium between tradition and new techniques and the result is amazing corn flavor steamed quickly and paired with a sweet and sticky pineapple caramel with flavors reminiscent of Pineapple Upside Down cake.
